Tofu Wrap

Method

  • Warm the tortillas in microwave or on a skillet, until soft.
  • Heat the oil in a frying pan and sauté the garlic and onion for a minute or two.
  • Then add tofu, peppers and tomatoes and cook, stirring frequently for 4-6 minutes.
  • Remove from heat. Mix in turmeric and a few dashes of Tabasco sauce.
  • Season with salt and pepper.
  • Place a couple spoonfuls of the tofu and vegetable mixture in each flour tortilla. Wrap and serve hot.

Ingredients
  • 2 flour tortillas
  • 1 tbsp vegetable oil
  • 1 clove garlic, minced
  • 1 small onion, diced
  • 250g firm tofu, sliced into ½ -inch fingers
  • 1 small tomato, diced
  • 1 small red bell pepper, sliced
  • 1 small yellow bell pepper, sliced
  • A pinch of turmeric
  • Tabasco sauce, to taste
  • Salt and pepper, to taste
