Olive Loaf
 

Method

  1. Preheat the oven to 350° F.
  2. Butter a 9 by 5 inch loaf pan.
  3. Combine the flour and baking powder in a large bowl.
  4. Make a well in the centre and add the eggs, one at a time, stirring after each addition to blend well.
  5. Add wine and oil and mix well until smooth.
  6. Stir in cheese, ham, bacon, olives, pepper and salt.
  7. Pour the batter into the loaf pan and bake for about an hour.
  8. Cool the loaf in the pan for 15 minutes.
  9. Serve warm or at room temperature.

  • Olive oil ½ cup
  • All purpose plain flour 250 g
  • Eggs 4 large
  • Baking powder 1 tsp
  • Dry white wine 125 ml
  • Diced ham 230 g
  • Diced bacon 170 g
  • Black/green olives,
  • sliced 150 g
  • Parmesan cheese 150 g Salt and pepper
