Rice-Chana Casserole

Method

  1. In a large saucepan combine water, rice, carrots, green onions, chicken soup cube, coriander, salt, and tabasco. Bring to boiling; reduce heat. Cover and simmer for 15 minutes or until rice is tender and the water is absorbed.
  2. Stir in the gram, cottage cheese, and parsley.
  3. Spoon into an 8x8x2-inch baking dish.
  4. Cover and bake in a 350 degree F oven for 20 to 25 minutes.
  5. Sprinkle with cheddar cheese. Bake, uncovered, for 3 to 5 minutes more or until cheese melts.

  • 2 cups water
  • 1 cup long grain rice
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1 cube chicken soup
  • 1/2 tsp coriander powder
  • Salt, to taste
  • Tabasco, to taste
  • 1 cup soaked black gram (chana)
  • 125g low-fat cottage cheese, sliced
  • 1 tbsp chopped fresh coriander
  • 2 tbsp shredded low-fat cheddar cheese
