Method:Add ghee to the flour. Mix well.
- Mix the mutton picattas with rum, raw papaya paste and half of the ginger garlic paste and a bit of the salt.
- Let it marinate overnight.
- Now , mix together all the remaining ingredients except for the refined oil . Adjust the seasoning.
- Finally finish it with the refined oil.
- Let it marinate further for 4 hrs.
- Cook it in tandoor in moderate heat.

Ingredients
- 800 gms lamb picattas (picattas of 40 gms each)
- 4 tablespoons ginger garlic paste
- 2 tablespoons raw papaya paste
- 40 milliliters dark rum
- 120 gms coriandr leaves, made into paste along with green chillies
- 20 gms green chillies
- 4 tablespoons brown onion paste
- 3 tablespoons hung curd
- 2 teaspoons garam masala
- 2 tablespoons refined oil
- Salt to taste
- Accompaniment: Mint chutney
