Method:
Add ghee to the flour. Mix well.
  1. Mix the mutton picattas with rum, raw papaya paste and half of the ginger garlic paste and a bit of the salt.
  2. Let it marinate overnight.
  3. Now , mix together all the remaining ingredients except for the refined oil . Adjust the seasoning.
  4. Finally finish it with the refined oil.
  5. Let it marinate further for 4 hrs.
  6. Cook it in tandoor in moderate heat.
Serves 4
Ingredients
  • 800 gms lamb picattas (picattas of 40 gms each)
  • 4 tablespoons ginger garlic paste
  • 2 tablespoons raw papaya paste
  • 40 milliliters dark rum
  • 120 gms coriandr leaves, made into paste along with green chillies
  • 20 gms green chillies
  • 4 tablespoons brown onion paste
  • 3 tablespoons hung curd
  • 2 teaspoons garam masala
  • 2 tablespoons refined oil
  • Salt to taste
  • Accompaniment: Mint chutney
