| Christmas Roast Chicken with Herbed Bread Stuffing and Gravy |

Herbed Bread Stuffing
Ingredients
- 1 baguette bread, cubed
- 3 medium onions, chopped
- 3 celery ribs, thinly sliced - crosswise
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/2 teaspoon dried rosemary
- 1 stick unsalted butter
- 1 1/2 cups chicken broth
- 1/2 cup water and cranberry sauce
Method
- Preheat oven to 325°F
- Toast bread in a large shallow baking pan in middle of oven until just dry, 5 to 10 minutes.
- Cook onions, celery, and herbs in butter in a large heavy skillet over moderately lowheat, stirring occasionally, until celery is softened, about 10 minutes.
- Stir together bread, vegetables, broth, water, and salt and pepper to taste, and then cool completely, uncovered, make a roll and allow cooling.
- Finally sliced the roll and serve with roast chicken.
Roast Gravy
- Collect all trimmings of bed vegetables and put it in pan.
- Add stock water. Allow to boil.
- Finally, add a little flour and butter to make a smooth gravy.
- Strain it with muslin cloth finished with white wine.
- Serve it with roast chicken and stuffing, accompanied with tossed vegetables and potatoes.

Method
- Preheat oven to 350°F.
- ub inside of chicken with lemon half. Sprinkle with salt and pepper.
- Add the onion quarters, dried herbs, and parsley to chicken cavity.
- Place chicken in a shallow roasting pan and roast at 350° for about 20 minutes.
- Baste with melted butter several times (optional).
- The same chicken melted fat can be basting on top of the chicken for moisturizing.
- Internal temperature should register about 175° on a meat thermometer. For about 45 minutes.
