Bamboo Chicken

Method

Mix ingredients 1 to 10 well

Stuff it all inside the raw bamboo

Seal the open end with the banana leaf

Heat the bamboo on coals, inside a tandoor

After half an hour, lift it out with sticks. The bamboo will be black and charred – handle it carefully.

Pull off the banana leaf and get the chicken out

Serve with mint chutney

 
This is a tribal recipe from the forests of Maaredumilli in East Godavari, Andhra Pradesh. Note that you don't have to use oil for this dish – the chicken gets cooked with the inherent moisture inside the bamboo.

Ingredients:
  • Chicken, cut into bite size pieces – ½ kg
  • 2. Brown onions, finely chopped – ¼ kg
  • 3. Lemon – 4
  • 4. Canned bamboo shoot, chopped - 1 piece
  • 5. Coriander leaves – a pinch
  • 6. Dhania powder – 1 tsp
  • 7. Jeera powder – 2 tsp
  • 8. Red chilli powder – 2 tsp
  • 9. Garam masala – ½ tsp
  • 10. Salt – 2 tsp
  • 11. Cleaned raw bamboo, closed only at one end – 1
  • 12. Banana leaf - 1
