Tofu Scramble with Spinach

Method

  1. Sauté the garlic and onion in olive oil.Cook for three to five minutes or until onion turns soft.
  2. Add remaining ingredients except spinach and cook, stirring frequently for another five minutes or so, until tofu is cooked.
  3. Add spinach and cook for a minute or two, till it is wilted,stirring well. Serve hot with rice or any Indian bread.

Ingredients
  • 1 onion, diced
  • 3 cloves of garlic, crushed
  • 250gm tofu, pressed and crumbled
  • 100gm spinach, cleaned
  • 1/2 tsp turmeric
  • 1 tsp coriander powder
  • 1/2 tsp powdered cumin
  • Salt to taste
  • 1 tbsp olive oil
