Thai Stir Fry Tofu

Method

  • Blend peanut butter, water, soy sauce, lemon juice and brown sugar. (Heat the peanut butter in the microwave to "liquefy" it.)
  • Cut the tofu into cubes.
  • Marinate the tofu in half the peanut sauce overnight.
  • In a large skillet or wok, heat the oil over high heat. Add the garlic and crushed red pepper, stir-fry 30 seconds.
  • Add the marinated tofu. Sear the tofu on each side till it is golden brown.
  • Add veggies and stir fry until they just begin to soften but are still a little crunchy (about 5 minutes).
  • Stir in the remainder peanut sauce and chili sauce.
  • Serve hot with rice.

Ingredients
  • 2 tbsp peanut butter
  • ¼ cup water
  • 1 tablespoons soy or tamari sauce
  • ½ teaspoon lemon juice
  • ½ tbsp brown sugar
  • 250g firm tofu
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • Crushed red pepper, to taste
  • 1 cup mixed veggies: bell peppers, carrots, beans, bok choy
  • 1 tbsp spicy Thai chili sauce
