Method:

  • Blend together all the ingredients meant for the stuffing.
  • Split eggplants and fill with stuffing.
  • Take in a flat pan and pour the oil into it.
  • Place the stuffed eggplants in the oil, cover and cook till done.

  • 100 gm eggplant
  • 2 tsp oil
For the stuffing
  • 100 gm grated coconut
  • 1 tsp ginger garlic paste
  • 1 tsp garam masala powder
  • 1 tsp coriander powder.
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp Chili powder.
