Stir Fried Asparagus with Ginger

Method

  • Slice asparagus into bite-sized pieces.
  • Heat olive oil in a skillet (at medium heat).
  • Add ginger slices and let them sizzle for about 30 seconds.
  • Add asparagus. Stir-fry for 4 - 5 minutes or until crisp.
  • Add nuts, salt and pepper and stir-fry for another 30 seconds.
  • Serve hot.
Serves 2

Ingredients
  • 250g medium-sized asparagus
  • 10gm fresh ginger, sliced
  • 1 tbsp olive oil
  • 50gm roasted cashews or almonds
  • Salt and pepper, to taste
