Roasted Vegetables
 
 


Method


  1. Combine broccoli, onions, garlic, cauliflower, yellow pumpkin, and brinjal in a bowl. Add the spices.
  2. Toss vegetables to coat.
  3. Put vegetables in a heavy-bottom non-stick pan.
  4. Roast for 10 minutes, on high heat.
  5. Add oil, bean sprouts and cook for another 5 to 10 minutes or until vegetables are tender.
  6. Serve hot with rice, or in a wrap, with salsa.

  • 1/2 cup chopped broccoli
  • 1/2 cup diced onion
  • 2 garlic cloves, crushed
  • 1/2 cup chopped cauliflower
  • 1/2 cup diced yellow pumpkin
  • 1/2 cup diced brinjal
  • 100g bean sprouts
  • 1 tbsp coriander leaves Garam masala, amchoor (dried mango powder) and salt, to taste
