Roasted Eggplant Chutney

Method:

  • Roast the eggplant on the stove on medium flame.Roast the eggplant on the stove on medium flame.
  • After it is done, put it in a dish of water and allow it to cool.
  • Remove the burnt outer skin.
  • Mash the soft pulp and mix the remaining ingredients into the pulp.
  • Serve hot with roti or rice.

  • 1 large eggplant
  • 1 onion cut into small pieces
  • 1-2 green chillies cut into small pieces
  • 1/4 tsp tamarind pulp
  • Salt to taste
For the stuffing
  • 100 gm grated coconut
  • 1 tsp ginger garlic paste
  • 1 tsp garam masala powder
  • 1 tsp coriander powder.
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp Chili powder.
