Method

  1. For dressing, combine apple juice, lemon peel, lemon juice, olive oil, coriander, garlic, pepper and salt.
  2. For filling, toss together rice, corn, green pepper, cucumber, raisins, carrot, green onion, and olives in a large bowl. Add dressing and toss until evenly coated. Cover and refrigerate up to 4 hours.
  3. Slice off the top from each tomato. Gently pour out its juice, seeds etc. (This may also be added to the dressing.)
  4. Spoon the filling into each tomato, and serve.

  • 1/4 cup apple juice
  • 2 tsp finely shredded lemon peel
  • 3 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp chopped coriander
  • 2 cloves garlic, grated
  • Coarsely ground pepper, to taste
  • Salt, to taste
  • 1 cup cooked rice
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped cucumber
  • 1/4 cup steamed corn
  • 1 medium carrot, chopped
  • 2 medium green onions, sliced
  • 1 tbsp raisins, coarsely chopped
  • 1 tbsp green olives, chopped
  • 6 large ripe tomatoes
