Oriental Noodles

Method
  • For sauce: in a saucepan over medium heat, blend sugar, vinegar, soy sauce and tamarind paste. Keep aside.
     
  • Cook the noodles until soft; drain. Keep aside.
     
  • In a large pan or wok, over medium heat, warm oil and sauté garlic and spinach.
     
  • Add tofu and stir.
     
  • Add noodles and stir.
     
  • Stir in the sauce and mix well.
     
  • Add salt and Tabasco to taste.
     
  • Stir in peanuts and remove from heat.
     
  • Serve garnished with lime and basil.

Ingredients
  • 25g brown sugar
  • 2 tbsp brown vinegar
  • 1 tbsp soy sauce
  • ½ tsp tamarind paste
  • 100g noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, chopped
  • 80g tofu, cut into ½ inch pieces
  • 50g spinach leaves, shredded
  • 30g coarsely ground peanuts
  • Salt to taste
  • Tabasco to taste
  • Lime wedges and basil leaves to garnish
