Noodles with Tofu and Beans

Method

  • Heat a wok over high heat.
  • Add 1 tbsp oil and swirl.
  • Add the tofu. Reduce the heat to medium-high, and stir-fry for one to two
  • minutes until the tofu begins to brown.
  • Add the garlic, ginger and chili, and stir-fry for no more than 10 seconds.
  • Add the beans and peppers, and stir-fry two minutes.
  • Add the soya sauce and sesame oil, salt and sugar.
  • Add the noodles. Stir-fry for one to two minutes.
  • Serve hot.

Ingredients
  • 100g noodles, boiled
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 250g tofu in ½ inch strips
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 small green bell pepper, sliced
  • 30g beans, trimmed and sliced very thin
  • Salt and chilli flakes, to taste
  • ¼ tsp sugar
