Lima Beans And Carroys
 


Method

  • Soak lima beans in water overnight.
  • Boil baby carrots and lima beans separately.
  • Sautee onions and caraway seeds; add apple juice and reduce by half.
  • Add in demerara sugar, carrots and Lima beans; toss till combined.
  • Cover and cook for few minutes; season and sprinkle with fresh oregano and serve.
Ingredients
  • 250 grams Baby carrots
  • 100 grams Lima beans 
  • 60 grams Sliced onions
  • 1 tsp Caraway seeds
  • 100 ml apple juice
  • 30 grams Demerara sugar
  • 30 ml Olive oil
  • 1 small bunch Fresh oregano
  • Salt, peppercorn(crushed) to taste
