Lentil and Lamb Hotpot

  1. Heat oil over medium heat. Add lamb, sauté for five minutes or until browned.
  2. Add carrot, onion,celery, bell peppers and garlic, and sauté for five minutes.
  3. Stir in the spices.
  4. Add three cups water and lentils and bring to a boil. Cover, reduce heat and simmer for 40 minutes, stirring occasionally.
  5. Add spinach, cover and simmer for two to three minutes.
  6. Add tomatoes and simmer for five minutes.
  7. Remove from heat and stir in chopped cilantro.
  8. Serve hot with toasted whole-grain bread.

  • 250gm leg of lamb, cut into 1-inch pieces
  • 50gm carrot, diced
  • 50gm celery, chopped
  • 50gm onion, chopped
  • 50gm green lentils, soaked overnight
  • 200gm spinach, chopped
  • 200gm tomatoes, diced
  • 1 tsp fresh cilantro, chopped
  • 1/2 red or yellow bell pepper, diced
  • 2 garlic cloves, crushed
  • 1 tsp curry powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
