Brinjal Toss

Chopped fresh basil leaves – to taste Salt, to taste Freshly ground black pepper, to taste Lightly oil a medium, microwave dish with olive oil. Spread the brinjal slices in a single layer in the dish so they do not touch. Oil the slices with remaining oil. Cover the dish and microwave for 7 minutes, or until tender when tested with a fork.

In a large serving bowl, combine the tomato, green onion, garlic, and basil. Add the brinjal slices. Season with salt and pepper. Toss gently to mix. Serve immediately.

  • 200 g brinjal, unpeeled, sliced into 1" slices
  • Olive oil, 1 tsp
  • 1 large tomato, blanched & chopped
  • 1 large green onion, chopped
  • 1 clove garlic, chopped
