Baked Potatoes

Method:

Wash the potato, and prick several times with a fork. Wrap it in a paper napkin and place on the microwavedish. Cook on full power in the microwave for 4-5 minutes.

When soft, remove the potato from the microwave, and cut in half, lengthwise. Scoop out and mash up the inside. Add cottage cheese and season with salt, pepper and mixed herbs. Put the scooped out potato mash back into the potato shells. Top with butter. Return to the microwave, and cook for about 1 minute. Serve hot with carrots, beans, and peas.

Calories: About 200 cals per serving.


Ingredients:

  • 1 large potato
  • 1 tsp butter
  • 1 tbsp crumbled cottage cheese
  • Salt and pepper to taste
  • Mixed herbs, to taste
  • 50 g carrots and beans, sliced and steamed 50 g peas, boiled
