Baby Corn Fried Rice

Method

  • Wash and soak rice in two cups water. Keep it aside.
  • Heat the oil in a pan.
  • Sauté onions, till they turn golden brown.
  • Now, put crushed peppercorns in it, along with garlic and mix well.
  • Add in baby corns, boiled peas and salt.
  • Cover and cook for 5-10 minutes on low heat. Keep it aside.
  • Meanwhile, cook the rice along with water.
  • Let it come to boil. Then cover, simmer, till the rice is done.
  • Add the boiled rice to the baby corn mixture, stirring it in gently. Mix well.
  • Garnish with roasted cashews before serving.
Serves 2

Ingredients
  • 1 cup rice
  • 10 sticks of baby corn, cut into small pieces
  • 1 medium onion, finely sliced
  • 1 tsp peppercorns, crushed
  • 4-5 flakes garlic, crushed
  • 1 tbsp olive oil
  • ½ cup peas, boiled
  • 10g cashews, roasted
  • Salt to taste
