Sheer Khorma
  • Wash the dates and boil in 1/2 a litre of milk for about 15 minutes the night before you want to make sheer khorma. Take the dates out while still hot and soak in warm water. Save the milk.
  • Discard water, pit the dates and slice thinly. Mix the saved date milk with the rest of the milk and boil. Add the sliced dates to boiling milk and set aside so that the milk acquires the taste of the dried dates.
  • Heat ghee in a pan; add crushed cardamoms and fry for a minute. Add vermicelli to the ghee and fry till it acquires an even golden brown colour. Then add the milk with sliced dates. Add washed raisins.
  • Cook on medium flame in an open pan for 15 minutes, then lower the heat further and add cream followed by sugar. Bring to a boil and let it simmer for another 2-3 minutes.
  • Transfer to serving dish and garnish with slivered almonds and pistachios. Sheer Khorma can be relished either warm or chilled.


  • 150 gm roasted very thin vermicelli
  • 2 lit whole milk
  • 15 dried dates
  • 1/2 lit warm water
  • 1 to 2 cups rich cream
  • 6 green cardamom pods
  • 2 tbsp ghee
  • 2 cups sugar
  • 1/2 cup raisins
  • 12 almonds slivered
  • 12 pistachios slivered
